Here’s a really quick and easy way to prepare some fish for supper (and sneak in plenty of veg!). Simply cut out a square of parchment paper, throw in an assortment of vegetables – you can add some chopped herbs and cheese too – and then place a fish fillet of your choice on top. There is no need to skin the fillet beforehand as once cooked, this will peel away from the fish easily. Just make sure the vegetables aren’t too chunky otherwise they may be rather too ‘al dente’ by the time the fish is cooked. Drizzle with a little oil and season well , then scrunch up the ends of the paper to make a sealed parcel. Place on a tray and slide into a preheated oven at 180C for 15-25 minutes, depending on the type and thickness of the fillet.
