Although I lectured in Nutriton for some years, I would always reassure my students that as long as one follows a healthy and balanced diet (and exercises regularly!), there is space for the occasional treat.
This is a classic French mille-feuille with crème pâtissière and fresh raspberries. Here, I’ve made my own puff pastry which is more time-consuming, but so worth it in terms of taste and nutritional quality…no nasty trans-fats. You can just as easily make this with bought puff pastry though and then it really is a quick pudding to rustle up.
